We batch roast them, adding only salt to carry out their distinctive taste. Available only natural, not red in color. We have been importing Turkish pistachios for more than 60 years, and we suggest the Turkish variety to those valuing flavor above all else. Pistachios from Turkey are smaller and less open than California-grown pistachios and have darker shells, but they feature a richer, more distinctive taste; Turkish pistachios are left to dry with their outer husks on, which darkens the shells but protects the flavor. thus, many pistachio aficionados think Turkish pistachios are better-tasting than any other type, including Iranian.
